For today I propose you a Czech recipe, perfect for an aperitif or a starter.
Hermelin is a cheese that is very similar to Camembert or French Brie. In our preparation we will marinate it in olive oil peppered with spices.
Ingredients (1 jar):
- 250g of Hermelin Camembert or Brie,
- 200g of olive oil,
- 1 white or red onion,
- 3 cloves of garlic,
- 1 teaspoon of thyme or savory,
- 1 teaspoon of chili powder,
- 1 teaspoon of paprika,
- 1 chili,
- Salt and pepper
Preparation:
1.Wash and seed the chili, making sure to remove the white membrane, then cut it into small cubes. Place them in a bowl, then add the chili powder, paprika and thyme. Salt and set aside.

2.Peel the garlic cloves and the onion, then press the cloves and slice the onion. In a frying pan, brown them in a drizzle of olive oil until the onion is soft, then add the chili mixture. Let simmer for 5 minutes, then remove to a bowl. Let cool.

3.Cut the cheese into cubes, slices or pieces and add it to the previous mixture. Put everything in a jar and cover with olive oil.

4. Close the jar tightly and then refrigerate for at least 5 days before tasting.
Note: Olive oil solidifies in the refrigerator, so feel free to leave the jar at room temperature before tasting.
Perfect for spreading on toast.
